Mock Sushi

If you want to learn how to rethink your cooking to eat healthier, Benji Xavier (https://www.instagram.com/benjixavierr/) is a great guy to follow. 

We love sushi, but to feel like I've anywhere near full, you have to order a ton of it. 

And then there are the calories! Rice is crazy full of them. 

So, when he posted the following, I was interested. I'd never even attempted anything like sushi before. Click on the pix and it will take you right there!


I made a list, and headed to the store. 

Before I move on, I've got to confess that there was a bit of sticker shock with this trip. Salmon and crab are expensive. I did not buy the imitation crab which is somewhat less, but it's also full of stuff I've flung to the wayside of my eating habits. (Sam's is. a great place to get crab BTW!)

There were also things I bought that will last for multiple meals like Furtaki and wasabi (which we usually have but was out of).

Easy to make. We got two meals out of it. 

AND the best part is that it was delicious.

Using the cauliflower rice was a huge savings in calories and I couldn't tell much difference.

I think next time, I'll try making them in muffin tins. 

Oh, and I did find some GimMe crackers (Amazon) which added a nice seaweed touch to the taste.
